If you want to make it from scratch, prepare the Pita Bread recipe (page 124) and spread the zatar mixture over the loaves before baking. Place zatar, ALL GOOD SPICE and olive oil in a small bowl and mix. Stir in 1 to 2 tsp water to thin to spreading consistency. Spread 1 1/2 Tbsp on the bottom side of each pita. Place under a preheated broiler and broil until lightly browned.
