This versatile Indian rice dish can be served as a side dish with chicken or fish. Or add small bits of cooked chicken or meat for a main dish. It is excellent as a vegetarian main dish because the kidney beans provide protein while the rice and vegetables round out the meal.
Place rice in a strainer and rinse under hot water until water runs clear.
Heat Clarified Butter or oil in a medium saucepan and add rice. Stir
over medium heat 1 minute, until butter or oil is absorbed. Add the
remaining ingredients and bring to a boil. Reduce heat and simmer,
covered, for 15 to 20 minutes until water is absorbed. Gently stir rice
about halfway through the cooking. When rice is done, give it another
gentle stir. If rice is sticking to bottom of pan, add a couple tablespoons
of water. Cover and let it sit for about 10 minutes before serving. This
rest period allows the rice to firm up so the grains will stay separated.
