Many dishes are enhanced with the addition of a good Béchamel Sauce, which is commonly known as “white sauce”. The addition of SHAFIK’S RED LENTIL SOUP SPICE rounds out the flavor and gives it a satisfying richness. Try this sauce on any steamed vegetables. Or add small bits of chicken or meat and some vegetables to the sauce and serve it over rice or noodles. Experiment by adding other BLENDS, such as ATHENIAN GARDEN SPICE or HELLENIC HERB BLEND to the sauce for flavor variety. For 8 ounces of uncooked pasta you will need about 1 1/2 cups of sauce.
In a small saucepan, melt butter over medium heat. Add the flour and SHAFIK’S RED LENTIL SOUP SPICE and stir briskly until bubbly and smooth. Remove from heat and slowly add milk, whisking continuously. Return to heat, whisking continuously until mixture comes to a boil. Reduce heat and simmer until sauce is thickened.
