Line a strainer with a double layer of cheesecloth or paper towels and set in a bowl. Place the yogurt in the strainer for 30 minutes to drain off excess liquid*. Meanwhile, place the cucumbers in another strainer or a colander and sprinkle with salt. Set the strainer in a bowl to drain for 30 minutes. Then gently press the cucumbers to remove more water. Place drained yogurt in a bowl and mix in the cucumbers, garlic, mint and ATHENIAN GARDEN SPICE. *Some brands of yogurt may not drain well because of the gelatin or other ingredients that they contain. With these yogurts, the result will be a thinner Tsatsiki.
