This is a great cake for Halloween or Thanksgiving
Preheat oven to 350 degrees.
Generously spray a tube pan or bundt cake pan with non-stick spray.
Chop the raisins and soak in hot water for a few minutes. Drain and set aside. Place the dry ingredients in a large bowl and mix well. Make a well in the center and stir in the Clarified Butter, eggs and pumpkin.
Mix until ingredients are blended. Do not over-mix. Fold in the drained raisins and the walnuts. Spread the batter in the prepared pan and bake for 60 to 70 minutes, or until a toothpick inserted in the center comes out clean. Allow to cool for about 1/2 hour. Invert onto a cake plate. Drizzle with Orange Glaze (below) and serve with whipped cream.
In a small bowl, blend all the ingredients until smooth. If the glaze is too thick, add water 1/2 tsp at a time until thin enough to drizzle.
Serve with whipped cream.

- 2 Tbsp frozen orange juice concentrate, melted
- 1/2 tsp vanilla
- 2 to 3 drops orange coloring
