Put all the vegetables in a bowl and pour the Greek Marinade over them. Or place all the ingredients in a gallon size zip-lock bag. Close and place on a plate. Marinate in the refrigerator several hours or overnight, turning occasionally. Alternate the different vegetables on skewers and grill over hot coals.
- 1 Each Zucchini, crooked neck and summer squash, cut into 1 inch pieces
- 1 Each Green, Red and Yellow Bell Peppers, cut into 1 inch pieces
- 1 Large Onion, cut into chunks
- 8 Cherry Tomatoes
- 8 Large Mushrooms
- 1 c Greek Marinade
