This recipe is great for quick pizzas.
Preheat oven to 450 degrees.
Mix sauce ingredients in a small pan and simmer for 1 to 2 minutes. Place pitas on a cookie sheet, bottom side up. Spread the sauce on the pitas. Then sprinkle with the grated mozzarella. Distribute toppings over the cheese.
Bake for 5 to 10 minutes until cheese is melted and toppings are browned.
*Topping Suggestions: Thinly sliced vegetables (green bell peppers, red bell peppers, mushrooms, onions), black olives, anchovies, pepperoni, diced ham or whatever your family likes.
