Preheat oven to 425 degrees. Spray a large, shallow baking pan with
non-stick spray.
Rinse chicken and pat dry. Place chicken pieces in baking pan and
sprinkle lightly on both sides with ALL GOOD SPICE and very
generously with FALAFEL SPICE. Bake uncovered 40 to 45 minutes
until browned, turning once.
Meanwhile, in a medium frying pan sauté pine nuts in Clarified Butter
over medium heat until golden brown. Remove nuts and set aside. Add
onions to pan and sauté until they begin to brown slightly. Set aside.
When chicken is done, remove from oven and transfer to an oven-safe
shallow casserole or platter. Spread onions on top and return to oven
for 10 minutes. Sprinkle with pine nuts and garnish with sprigs of
parsley.
Serve with Syrian Rice (page 40) and Tahini Salad (page 25).
