Mix in a bowl, 2 tablespoons Dijon mustard, 1 teaspoon packed dark brown sugar, 1 tablespoon bourbon. Slather mixture all over two, 1 ½ inch thick pork chops. Cover the surface liberally with Cajun seasoning. Place the chops on a medium hot grill then cook until slightly charred and cooked through, about 10 minutes on each side.
