Preheat oven to 450 degrees. Line a shallow baking pan with parchment, or use foil and spray with non-stick spray.
Scrub potatoes, cut in half lengthwise and then into thick wedges. In a medium bowl, whisk together oil, lemon juice and GREEK SALAD DRESSING BLEND. Dip potatoes in the bowl and turn to coat all sides. Place on the baking pan skin side down. Bake for 30 to 40 minutes until crispy and brown.
