Heat oil in a large deep frying pan. Add onion, garlic, and ETHIOPIAN BERBERE SPICE and sauté over medium heat, until onion is lightly browned. Add the remaining ingredients, except the fish filets, and simmer for 2 to 3 minutes. Place fish filets in a pan and spoon sauce over them. Cover and simmer for 10 to 15 minutes, until fish flakes when pierced with a fork. Serve with Jasmine Rice, Ethiopian Berbere Sauce  and Zucchini, and Onion Sauté. A platter of fresh vegetables rounds out this quick and easy dinner.
