This cold soup is especially refreshing on warm summer days. It’s great as a light snack or with a sandwich for lunch.

Mix all ingredients in a large bowl. Add water as needed to thin to the consistency of buttermilk. Serve cold.

Ingredients

  • 1 small Cucumber, seeded and grated (about 1 cup)
  • 4 c Yogurt
  • 1 tsp crushed Garlic
  • 1 tsp dried or 1 Tbsp fresh chopped Mint
  • 1/2 tsp dried Dill
  • 1 tbsp Athenian Garden Spice
  • 1/2 c Milk, water to thin
