This cold soup is especially refreshing on warm summer days. It’s great as a light snack or with a sandwich for lunch.
Mix all ingredients in a large bowl. Add water as needed to thin to the consistency of buttermilk. Serve cold.
- 1 small Cucumber, seeded and grated (about 1 cup)
- 4 c Yogurt
- 1 tsp crushed Garlic
- 1 tsp dried or 1 Tbsp fresh chopped Mint
- 1/2 tsp dried Dill
- 1 tbsp Athenian Garden Spice
- 1/2 c Milk, water to thin
